(Repost of December Newsletter) Memories from Christmas Past


'Tis the season of family joy, where delightful food and drinks bring us together. Reflecting on Christmas celebrations from my childhood in Lagos, Nigeria, it might come as a shock that our celebrations didn’t involve gifts under a tree. Instead, my mother crafted enchanting feasts, sourcing cuisines from diverse cultures to grace our table.


One memorable Christmas, a Lebanese chef curated our dinner, presenting us with delectable coconut rice, succulent peppered smoked turkey, and a vibrant salad. However, what truly captured our attention was the sweet cake she prepared. Nestled within this cake was a tart jelly—a departure from the typically firm & dense Nigerian fruit cakes. This moist, rich, dark-filled creation became the inspiration behind my recipe for a roselle jam.


This jam embodies that perfect blend of sweet and tangy—a delightful reflection of the sweetness of my youth. It is versatile - a spread for toast, a topping for yogurt or desserts, or even as a flavor enhancer in sauces and dressings. It's meant for those seeking a touch of sweetness with a tantalizing tartness, a symphony of flavors echoing the warmth and joy of the season.

Due to the roselle it contains, this jam also has the added benefits of being high in antioxidants that can neutralize free radicals in the body, support heart health & provide overall immune support.

 

Recipe of the month

Roselle Christmas Jam



INGREDIENTS

  • 2 cups Oja roselle tea leaves


  • 1 cup filtered water

  • 2 cups granulated sugar or alternative sweeteners like honey or maple syrup

  • 1 whole lemon (juiced)

  • 1 teaspoon vanilla extract (optional)


DIRECTIONS

  • Boil water and add dried roselle.

  • Once the roselle tea reaches a boil, simmer for 15-20 mins.

  • Add remaining ingredients & stir until sugar dissolves.

  • Increase heat & stir until the mixture gets thick (20-25 mins).

  • To test, place a bit on a chilled plate - should set and wrinkle.

  • Remove from heat, cool, transfer to jars, seal, and refrigerate.

  • Enjoy!
